Banana Fudge Ripple
DESCRIPTION: Creamy banana ice cream with a chocolate weave.
INGREDIENTS:
12%, 14%, or 16% Plain Mix
Banana Extract : Chiquita Banana Puree
Banana Puree: Virginia Dare Banana No Color #SA23 or Virginia Dare Banana With Color #SA24
Chocolate Weave: Star Kay White Chocolate #26 or Star Kay White Chocolate Variegate #DM429
Pour mix into a pail or directly into the machine. Add the extract and puree.
With a spatula, ripple chocolate weave into the ice cream, as it is coming out of the machine.

1O QT MACHINE – 4 1/2 QTS MIX, 3/4 OZ BANANA EXTRACT, 1/2 QT BANANA PUREE, 1 QT CHOCOLATE WEAVE
20 QT MACHINE – 9 QTS MIX, 3/4 OZ BANANA EXTRACT, 1 QT BANANA PUREE, 1 QT CHOCOLATE WEAVE
40 QT MACHINE – 18 QTS MIX , 3 OZ BANANA EXTRACT, 2 QTS BANANA PUREE, 2 QT CHOCOLATE WEAVE
